Chicken Enchilada Dip

    I have made this several times. It is great. Recently I doubled the chicken, added chipotle in adobo and a bit of red enchilada sauce and stuffed in flour tortillas. Baked in a casserole dish topped with shredded cheese and more enchilada sauce. It was a hit.

    Place Shredded Chicken in a Medium Bowl, and Mix in Cream Cheese, Mayonnaise, Shredded Cheese, Green Chile Peppers and Jalapeno Pepper.
