Chicken Enchilada Dip,I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken.,I have made this several times. It is great. Recently I doubled the chicken, added chipotle in adobo and a bit of red enchilada sauce and stuffed in flour tortillas. Baked in a casserole dish topped with shredded cheese and more enchilada sauce. It was a hit.,Ive made a similar dip which is delicious, and Im sure this will be as well. Question: The servings info is listed as 25. Is that accurate? If so, Ill need to halve as Im planning to serve to a much smaller group. Thanks so much!

Place Shredded Chicken in a Medium Bowl, and Mix in Cream Cheese, Mayonnaise, Shredded Cheese, Green Chile Peppers and Jalapeno Pepper. |
