Chicken Marmalade

    I marinated my chicken overnight. When I cooked the chicken I cooked the marinade to boiling, then introduced about half a teaspoon of cornflour to it to thicken it. used it as a sauce that I spooned over the arranged chicken and brown Jasmine rice (which was perfect with it, though you could even use buttery mashed potato) . Then I topped the served up plates with a tiny weeny bit of grated orange zest and grated ginger and a generous amount of green onion sliced on the diagonal. It tasted and looked lovely. I am going to try this recipe with pineapple juice and preserve. I'll let you know. BTW, cut up your own whole chicken. There are many sites that tell you how. It is not only economical, but it gives you power and confidence in the kitchen. We all need that. Enjoy this recipe. It's so easy and very good.

    Cut Up Chicken.
