Chicken Roll-Ups With Goat Cheese and Arugula, Simple recipe from Everyday Food October 2005 , Gorgeous! I bought a Goat cheese round (fits in 2 hands) with cracked black pepper crusted on the top This was very sharp/astringent so used a lot of rocket (aragula); I was also liberal with the cheese & was afraid it would ooze so I made foil nests/like a basket & 3 cocktail sticks each (I keep toothpicks in the bathroom lol), but leaving plenty of chicken exposed to brown; had already bashed them to make escalopes as I find they roll better then I served with extra rocket & a salad as good as I could get like the lovely picture! Also had new potatoes & just a light French dressing I wouldn’t have thought of cooking rocket as I think of it as salad, but I remember now, that years ago, we knew a Thai family & they always cooked it! (that was years before rocket started appearing in British shops), This was amazingly simple and delicious, thanks for sharing!
