Chipotle Copycat Lime Rice Recipe, This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that use for making burritos But it really is good enough to have on it’s own *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice , I think you would get more bang for the lime buck if you A Zested the peeling and added it in B added lime juice to rice after it’s cooked I have seen them do this at Chipotle , Recipe is totally wrong It’s 1 cup of rice per 2 cups of water 2/3 rice and 1 or 2 cups of water is absurd 10 to 15 minutes should be sufficient time to cook the rice Unless you rinse and soak your rice Juice of 1 lime But I’ve found that if you boil the lime juice it looses all the flavor I add it last with the cilantro
