Chocolate Chip Banana Nut Bread, A recipe (originally by Ann Tremont) my mother put in a cookbook that I have modified quite a bit Every time I bring this to work, everyone wants a piece (and there’s not enough to go around) , use this delicious recipe a couple times a month My wife asked me to make it using whole wheat flour So here are the tweaks that worked amazingly well Substitute a quality whole wheat flour for regular flour Add one quarter cup water Increase the amount of baking powder and vanilla to 2 teaspoonful each use whole walnuts and regular size semi-sweet chocolate morsels I allow the bananas to become over-ripe so that they have a slightly fermented odor Keep an extra over-ripe banana handy as needed to replace any unusable parts of the three bananas This recipe works better when stirred by hand and when the batter stands in its bakeware for at least 30 minutes prior to baking It will likely take up to 15 minutes longer to bake Thanks to the contributor for the original recipe! It is fantastic!, I’ve used this recipe twice and both times it came out AMAZING and identical I usually cook it for about 15 minutes longer just because the top tastes even better when it’s golden brown I sometimes go with more or less chips and walnuts than the recipe suggests depending on who I am baking for Great with coffee in the afternoon as a snack or with breakfast! Hand Mix Flour, Baking Powder, Baking Soda, Sugar, Walnuts, Chocolate Chips, and Vanilla Extract in Mixing Bowl Until Chocolate Chips and Walnuts Are Evenly Spread Out Throughout Mixture. |
