Chocolate Chip Shortbread,Shortbread is a comfort food to me, because it was one of the cookies my mom made the most. This recipe adds another comfort food…chocolate! These are incredibly delicious and rich and make a lovely presentation.,You can cook these on a cookie sheet. I have done it and spread soft coconut oil on the baking sheet it helps give it that crispiness on the edges and bottom,I am not sure what went wrong, but these turned out like cookies and not shortbread at all. I am quite an experienced baker and followed the recipe to the letter, so not sure what happened. That said, they were quite nice, although a little bit too chewy for my liking – they also had a greasy texture to them. Overall, enjoyable but not what I was expecting!
