    I made mini quiches to have as a side with dinner tonight. They smelled so good, I have already eaten two. They are wonderful, tender and light, not to eggy.     Preheat Oven to 450.

    Line Pastry in Pie Plate as Directed.

    Line Unpricked Pastry Shell With a Double Thickness of Heavy-Duty Foil.

    Bake in a 450f Oven For 5 Minutes.

    Remove Foil.

    Bake 5-7 Minutes More or Until Pastry Is Nearly Done.

    Reduce Oven Heat to 325.

    Stir Together Eggs, Milk, Green Onions, Salt, Pepper, and Nutmeg in a Bowl.
