4 medium-large yellow onions, chopped reasonably fine
6 large garlic cloves, minced
2 lbs ground beef (80%-90% lean)
1 lb ground italian sausage (hot or mild) or 1 lb sage flavored breakfast sausage
1/3 cup dry red wine

    Bring to the Simmer and Cook 21/2-3 Hours, Uncovered, Halfway Through, Skim Off as Much Fat as Desired. 30-40 Minutes Before Completion, Add the Wine, Stir Occasionally.
