Coconut Bars,My friend at work made these for a party we were having. They were sooooo goood I had to have the recipe. Now, my family ask me to make these all the time.,Having made dozens of chocolate chip cookies the day before, I automatically started making drop cookies out of this cookie dough instead of spreading it in a pan. Silly me! Oh well, let’s see, I said. What serendipity. The resulting coconut cookies were thin, crispy, delicious. I baked them at 350 for about 13 minutes. Being rather thin, the dough spread quickly, each teaspoon of dropped dough making a 3 Inch cookie. So, it’s important to leave plenty of room on the cookie sheet between each mound of dough. I also added about a 1/4 tsp of salt to the batter.,These are delicious! I had trouble dissolving 2 cups of brown sugar in 1/2 cup of butter so after stirring for a good while I just continued on with the recipe. I was about 1/4 cup short on coconut but they turned out very good anyway. Very sweet though so next time I’m going to use unsweetened coconut. Only took 30 minutes in the oven and the toothpick came out clean. Crispy edges and chewy centers.
