Coconut Oatmeal Raisin Cookies,I fill my cookie jar frequently with these delicious cookies. They’re a perfect treat for an afternoon cup of coffee or to tuck into a loved one’s lunch. If you don’t care for raisins, these cookies are equally good without them.,This is a potentially good cookie. Thought it lacked volume and was too sweet. Like other reviewers, I will add more flour, vanilla, and less of both sugars, and use unsweetened coconut and definitely add walnuts or pecans.. Yes, they do spread, so I would suggest putting them at least two inches apart. Thanks for sharing!
