Ingredients

Adjust Servings:
240 ml water (at room temerature)
350 g white bread flour
15 g honey
11 g desiccated coconut (about 1 1/2 tablespoons)
1/4 teaspoon vitamin c powder (optional)
1 teaspoon salt
15 g nonfat dry milk powder (1 tablespoon, heaped)
5 g butter (or for creamier taste just use 13g of butter and omit the margarine)
8 g firm margarine
3 3/4 g bread machine yeast (1 tsp slightly heaped)
65 g sultanas (or raisins- untested)
1 dash cardamom (optional)

    Followed this recipe quite closely, with a few adjustments that he suggested, and a few of my own. It was delicious. I even included the vitamin C to see what it would do. I mixed canned coconut milk with water, rather than straight water. As we did not have sultanas, I did a 50/50 mix of raisins to dried canberries. To amp up the coconuttiness and healthiness, used virgin coconut oil in place of the butter and margarine. My "dash" of cardamom was fairly heavy, but I could have been more. Maybe that my spice is losing flavor. At any rate, it baked and browned quite nicely, and had a good crust. The family really liked it!

    Coconut, Sultana & Honey Loaf (Abm / Bread Machine), I’m feeling quite proud of myself here as I kind of (literally only just) invented this (ok, ok – I was inspired by the nicest Peshwari Naan I’ve had in ages!), but this really works as a loaf It’s gorgeously light and fluffy, absolutely huge considering it doesn’t require all that much flour and has a wonderful sweet taste that could even be used with (certain) savoury foods and types of meat as well as just butter or honeys or fruit preserves Perhaps using part coconut milk instead of some of the water would be even nicer but I was being stingy and didn’t want to open the can 🙂 This one is just begging to be made again – I got so many compliments about this bread – even from a friend who doesn’t like coconut much who said I was onto a winner!     Weigh the Main Ingredients Into the Bread Machine and Select Raisin or Speciality Bread and Preferred Crust Type - I Chose Normal Crust Which Worked Nicely - and Start the Machine.

    at the Beep, If You Trust Your Machine not to Mash Up the Fruit Like Mine Always Does, Add the Sultanas With Just an Incredibly Light Dusting of Cardamom (or Omit It If You Don't Like Cardamom). For My Machine I Ignored the Beep and Waited Until Just Over 3 Minutes Remained of the 2nd Knead Cycle and That Worked Great - Guess It Depends How Squishy Your Sultanas Are :).
