    Cod With Mediterranean Salsa, This is a delicious and figure-friendly entree. It is quick and easy enough for weeknight meals, but it is also perfect for guests, as the presentation is lovely. I love the flavors – they do overpower the flavor of the fish a bit, but it doesn’t matter because they are so GOOD!!! This is definitely a keeper. We used a little bit of leftover minced red onion instead of a shallot. It was great.

    Pat Fish Dry and Season With Salt and Lemon Pepper.

    Cook Fillets 4 Minutes on Each Side or Until Done. Do not Overcook.
