Cod With Mediterranean Salsa, This is a delicious and figure-friendly entree. It is quick and easy enough for weeknight meals, but it is also perfect for guests, as the presentation is lovely. Spraying a non-stick pan with cooking spray will cause the non-stick surface to lose its non-stick properties. If the pan is non-stick, it shouldn’t be necessary., What a delicious recipe! I love the flavors – they do overpower the flavor of the fish a bit, but it doesn’t matter because they are so GOOD!!! This is definitely a keeper. We used a little bit of leftover minced red onion instead of a shallot. It was great.
