Ingredients

Adjust Servings:
1 tablespoon oil
2 lbs country style boneless pork ribs excess fat trimmed cut into 1 1/2 to 2 inch cubes
2 cups cola (do not use diet)
6 garlic cloves minced
3 tablespoons soy sauce
2 tablespoons chopped peeled ginger
1 bunch green onion chopped
1 1/2 cups sliced mushrooms
cooked brown rice or cooked white rice to serve stew over

    Heat Oil in Large Pot Over High Heat.

    Add Half of Pork; Saut Until Brown.

    Transfer Pork to Bowl.

    Repeat With Remaining Pork.

    Turn Off Heat and Slowly Add Cola Into Pot.

    Bring to a Boil.

    Reduce Heat to Med-Low, Cover and Simmer 30 Minute.

    Add Garlic, Soy Sauce, Ginger, Mushrooms and Half of the Onions.

    Cook and Simmer Until Pork Is Tender, About 40 Minutes.
