Cold Cucumber Soup

    I am not sure what you meant by peeling the cucumbers because you do not say what you did with them so I just cut them up and added them to the mix as I cannot imagine anyone throwing out the healthiest and most flavourful part of the vegetable. I did a few other tweaks but I will give it a 5 because I made changes that worked for me but used it as a base and without it I would not have come up with what I ended with at the end.

    Cold Cucumber Soup,Garden cucumbers are calling to be used in this soup! Put it into a insulated thermas for picnics.Easy make ahead for outdoor parties. Dill can be overpowering for some and others will like more.

    Saute Onion in Hot Oil 5 Minutes Over Medium Heat.

    Add Garlic and Cucumber and Cook 3 Minutes More.

    Add Broth, Lime Juice, and Sugar.

    Reduce Heat and Cover and Cook For 20 Minutes.
