Cold Cucumber Soup,Garden cucumbers are calling to be used in this soup! Put it into a insulated thermas for picnics.Easy make ahead for outdoor parties. Cilantro is very good in this too.,I am not sure what you meant by peeling the cucumbers because you do not say what you did with them so I just cut them up and added them to the mix as I cannot imagine anyone throwing out the healthiest and most flavourful part of the vegetable. I did a few other tweaks but I will give it a 5 because I made changes that worked for me but used it as a base and without it I would not have come up with what I ended with at the end.,used more garlic, used 0% Greek Yoghurt, Chicken Stock (I find chicken stock to be a better flavour booster than vegetable stock) and I would put the dill in a bit at a time and taste it as you go along and flavour to taste. Dill can be overpowering for some and others will like more.

Saute Onion in Hot Oil 5 Minutes Over Medium Heat. |
