Corn and Black Bean Quesadillas,A recipe I found in the HomeBasic, Winter 2007. I have not tried it so I took a guess for the preparation and cooking time.,Enjoyed this vegetarian dish. Halved the recipe but used 3 times the amount of cheese. Next time will try with a bit less mayo and more salsa,Mexican food is by far my favorite one and I can eat quesadillas all day long. This recipe is pretty easy to make, I guess its possible to substitute the frozen corn with canned one.
