Corn & Velveeta Casserole, This is AWESOME!!!! My girlfriend brought this dish for Thanksgiving and we all LOVED IT!! So I wanted to share…..ENJOY!!!, Different and delicious!! I made it as directed in the recipe, but I also followed the advice of folks who added some cheddar and crunch I crushed Ritz crackers to the top for the last 10 minutes of baking. I’ll definitely make this again., This is very tasty and was apparently well-received at the pot luck I attended last night because it was all gone! Like a couple of other cooks, used cheddar cheese instead of Velveeta. Didn’t use an entire half cup of butter in the body, but saved some to sprinkle over bread crumbs on the top during the last half hour of uncovered baking.
