Directions
Cornbread With Jalapeno and Cheddar Cheese,You can omit the jalapeno and or cheese. They have a nice kick to them. I am removing Trans fats from my recipes for better health. This originally had shortening and now replaced with a healthier choice of oil.,Great ‘basic’ recipe. I added lots for additional flavour. I’m gluten free so used King Arthur Flour One to One and it worked great. I was also a tad shy of one cup of buttermilk so I added 2 tablespoons of yoghurt. In addition, used 2 jalapenos, also added about a cup of chopped cilantro, a cup of fine diced green onions, a tea. of cumin and a tea. of chipotle powder and a couple of shakes of red pepper flakes. Because of the additional ingredients, used 2 eggs, not one. I also bumped the cheese to 1/2 cup and sprinkled some on top prior to baking. Yum, yum. My husband said he really couldn’t taste the jalapenos so next time I’ll use habaneros instead. Lovely texture, great looking. I would make this again in a heartbeat…..with habaneros!
