1 cup flour, sifted
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/4 cup canola oil, chilled
1 cup buttermilk (you can use plain milk)
1 egg, beaten
1/2 cup cheddar cheese
1 jalapeno, finely diced

Cornbread With Jalapeno And Cheddar Cheese

    Great 'basic' recipe. I added lots for additional flavour. I'm gluten free so used King Arthur Flour One to One and it worked great. I was also a tad shy of one cup of buttermilk so I added 2 tablespoons of yoghurt. In addition, used 2 jalapenos, also added about a cup of chopped cilantro, a cup of fine diced green onions, a tea. of cumin and a tea. of chipotle powder and a couple of shakes of red pepper flakes. Because of the additional ingredients, used 2 eggs, not one. I also bumped the cheese to 1/2 cup and sprinkled some on top prior to baking. Yum, yum. My husband said he really couldn't taste the jalapenos so next time I'll use habaneros instead. Lovely texture, great looking. I would make this again in a heartbeat.....with habaneros!

    Cut in Oil Till Crumbly.

    Pour Batter Into a Greased Hot Cast Iron Pan.

    Bake in a Preheated Oven 400 Degrees For 20 Minutes.
