1/4 cup onion, finely chopped
2 tablespoons flour
1/4 teaspoon ground black pepper
1/4 teaspoon dry mustard
1 1/2 cups milk
1 cup shredded mild cheddar cheese
2 cups potatoes, cubed, cooked, drained (frozen obriens would work too)

    Country Ham and Biscuit Bake, I had leftover ham from New Years so this is what I threw together one nite There wasnt a crumb left so it must be good! Feel free to add whatever leftovers you have , used real butter, added 1/4 c Swiss cheese (on top of the cup of cheddar), and a leftover leek that was hanging around in the fridge I also used Bisquik dumplings on top instead of biscuits This was easy to make and quite delicious! Thanks for posting such a versatile recipe that uses a bunch of leftovers!, Getting ready for vacation, I cleaned out my fridge and freezer with this! Wonderful, we all loved it and really liked the way the biscuits turned out (I defrosted them before adding to the top of the casserole) I didn’t use margarine, used Earth Balance Buttery Sticks from Trader Joe’s, used skim milk and low-fat cheddar cheese I did use the suggested O’brien’s and the addition of the peppers and onions from them made a really nice flavor jolt My husband being on a low-fat diet has made some of our meals kind of boring but this perked dinner-time up quite a bit! Oh, the ham was leftover, spiral-sliced, Costco ham VERY good!! I WILL make this again I’m very weary of making scalloped ham and potatoes with leftover ham!! Thanks Laurie, great recipe
