Cranberry Banana Nut Bread

    I made this recipe today. The combination seemed very flavorful and intriguing (vinegar). As I am new in baking, I decided to cut this recipe in a half. I read the reviews and I agree about the sugar (too much), vinegar (unclear the use, but does not hurt), orange zest (I added it), and cooking time (1 H 30 min) used 1/2 cup of sugar which I will cut down to 1/4 cup next time. I feel when combined with the cranberries and bananas the bread becomes too sweet. I only had Apple cider vinegar at home and I liked the result as it enhanced the fruit flavors I added 1 1/2 teaspoon of a Cara Cara orange zest and 1/3 cup of its juice. (this is the only orange I had around). I do not feel a strong citric flavor after the bread was baked. used one stick of butter as I am not so comfortable baking with only oil. I never measure the bananas, I mashed 4 large ripped bananas. I only used 1 cup of cranberries and 1/2 cup of walnuts. It took me 1h30min to cook the bread, it seems golden brown, but I am unclear how moist it will be. I made three muffins with the rest of the batter. The muffins were just delicious but, too sweet :S I am looking forward to try the bread! This recipe is great, I will definitely doing it again (with my tweaks )

This recipe is great, I will definitely doing it again (with my tweaks ),This was really, really, really good… with a few small changes. Looking at this recipe and other similar recipes, it seemed like an awful lot of sugar, so I omitted one of the cups. I also replaced 1.5 cups of the flour with whole wheat flour. Finally, I don’t have loaf pans so I tried this in a springform pan. On 350 it took about an hour and a half and came out perfect (don’t trust me on this–I tested every 10-15 minutes for the last 45 minutes and my oven runs a little cool). It’s just slightly dense in a good way (thanks, whole wheat flour!). I could really taste the orange juice in the batter (the batter was delicious) but not so much in the finished product. When I make this again I might experiment with adding orange zest. Still, the banana and cranberry flavors stand on their own.

    In a Bowl, Sift the First 4 Ingredients; Set Aside.

    Mix the Next 4 Ingredients Together in Another Bowl.

    Fold Flour Mixture With Orange Juice Mixture, Then Stir in Bananas, Cranberries and Nuts.

    Pour Into 2 Lightly Greased Loaf Pans.

    Bake at 350 For 45 Minutes to 1 Hour, or Until a Toothpick Inserted Comes Out Clean.

    *note: I Haven't Made This Bread in Quite Awhile and For Some Reason My Recipe Doesn't Have the Bake Time Written Down, So I'm Going by the Bake Time on a Banana Bread and a Cranberry Bread.
