2 teaspoons grated lemons or 2 teaspoons grated orange rind
2 teaspoons vanilla

3 cups all-purpose flour
1/2 cup coarsely chopped walnuts or 1/2 cup coarsely chopped pecans
4 teaspoons baking powder
1 teaspoon salt

    Made for the first time, but not the last! Awesome! Thank you Edited to say: I didn't see the cranberries were to be chopped! They are great whole and I did squeeze in 3 Cups! used partially thawed berries.

    Cranberry Bread, A friend gave me this recipe 30 years or so ago It has just the right amount of tartness from the cranberries and smells so good while baking It’s great to give as gifts to friends during the holidays, Fabulous! Added a cup of chocolate chips and it was divine Made many loaves as neighbor gifts Very simple recipe The hardest part was all the chopping and rinding (if that’s a word ) , Wonderful basic recipe! I doubled the recipe and used 1/2 and 1/2 Whole Wheat and All Purpose Flour I also didn’t have an orange so no rind used some orange juice concentrate and used double strength for normal orange juice To give it that extra oomph It was what I had Then I added 3 T spiced rum in place of the water I also used a mixture of pecans and walnuts, again what I had on hand

    Heat Oven to 350.

    Grease Bottoms Only of 2 Loaf Pans, 8 1/2 4 1/2 2 1/2 Inches or 9 5 3 Inches.

    Mix Cranberries, Sugar, Oil, Milk, Lemon Peel, Vanilla and Eggs in Large Bowl.

    Stir in Remaining Ingredients.

    Pour Into Pans.

    Bake 50 to 60 Minutes or Until Toothpick Inserted in Center Comes Out Clean.

    Cool 10 Minutes.

    Loosen Sides of Loaves from Pans; Remove from Pans.

    Cool Completely on Wire Rack Before Slicing.

    Store Tightly Wrapped in Refrigerator Up to 1 Week.
