Cranberry Orange Bran Muffins, A tasty way to get your fiber! I also plan on trying them with all orange juice in place of the milk , Its amazing how light and moist these came out Very pleased overall but find they are missing a bit of a flavour ‘kick’ Maybe by tomorrow, as suggested, the orange will come through (used a full 2 Tbsp orange zest) Only changes I made was to use frozen cranberries (1 heaping cup chopped) and brown sugar For the wheat bran used hard wheat red bran) Next time I think Ill try buttermilk and keep everything else the same There will definitely be a next time! Thank you, Delicious! I wasn’t really looking for a low-fat recipe, so I replaced the applesauce with canola oil, but otherwise followed the recipe exactly – came out beautifully! I’m finding that the next day they are even better as the orange flavor comes out a bit more Thanks for the recipe – I’ll be adding this one to my regular rotation!
