2 cups wheat bran
1/2 cup sugar
2 1/2 cups flour (use combo of white & wheat)
2 1/2 teaspoons baking soda
1 teaspoon salt
1/3 cup fresh squeezed orange juice (approximately)
1 2/3 cups low-fat milk (approximately)
1 - 2 tablespoon orange zest
1/2 cup applesauce
1 teaspoon vanilla
2 eggs, beaten
3/4 cup dried cranberries

Cranberry Orange Bran Muffins

    Its amazing how light and moist these came out. Very pleased overall but find they are missing a bit of a flavour 'kick'. Maybe by tomorrow, as suggested, the orange will come through (used a full 2 Tbsp orange zest) Only changes I made was to use frozen cranberries (1 heaping cup chopped) and brown sugar. For the wheat bran used hard wheat red bran). Next time I think Ill try buttermilk and keep everything else the same. There will definitely be a next time! Thank you

Thank you, Delicious! I wasn’t really looking for a low-fat recipe, so I replaced the applesauce with canola oil, but otherwise followed the recipe exactly – came out beautifully! I’m finding that the next day they are even better as the orange flavor comes out a bit more Thanks for the recipe – I’ll be adding this one to my regular rotation!

    Combine Dry Ingredients in a Large Bowl.

    in a Separate Bowl, Squeeze Orange Juice from Orange(s) and Combine With Enough Low-Fat Milk to Make 2 Cups Total. Add Zest from Orange(s). Mix in Applesauce, Vanilla and Eggs. Add Wet Ingredient Mixture to Dry Ingredients and Mix Well by Hand. Stir in Cranberries.

    Divide Between Muffin Tins, and Bake at 350f For 18-20 Minutes.
