Creamed Chipped Beef, This is a meal that my mother used to make a lot for us kids when we were growing up. You can find the dried beef in the grocery store with the pre-packaged lunch meats. It goes a long way on a cold day!, I find this recipe a little on the bland side. use 4 Tbsp of butter, 4 Tbsp of flour, 2 cups of milk use evaporated milk..a mix of 50% milk and 50% water. 2 packages of Buddig beef cut into thin strips. 1/4 tsp of garlic salt, 1/2 tsp of Marjoram, ground pepper, 2-3 Tbsps of diced pimento and sauted mushrooms. Melt the butter in a suitable pan, add the garlic salt, pepper and marjoram, slowly stir in 4 Tbsps of flour and then carefully add the milk stirring constantly until it thickens, add the sliced beef, pimento and mushrooms. Serve over biscuits or toast., I loved this recipe. I ranked it 4 because it did need a little extra add in. I did opt to use fresh corned beef sliced from deli torn up instead of dried chipped beef. The salt content was good. I did use white peeper instead also a dash of cayenne and a couple dashes of dried mustard powder. EXCELLENT!!!!!

Melt Butter in a Medium Saucepan. Blend in Flour, Salt and Pepper. Stir in Milk. Cook Over Medium Heat Until Mixture Boils and Thickens, Stirring Constantly. Reduce the Heat. |

Tear Beef Into Shreds and Add to Cream Sauce. Heat Through. |
