1/2 cup onion
1 (10 1/4 ounce) can cream of celery soup (use recipe #425183) or (10 1/4 ounce) can cream of chicken soup (use cream of anything soup mix)
1 cup milk
1/2 lb velveeta cheese
3 cups cooked rice (use brown rice)
1/2 teaspoon pepper

    I've made this dish too many times to count, both as a side dish & a complete meal. To do that I add chicken & mushrooms & it is so delicious. Saute mushrooms with the onions & add chicken of your choice. My husband prefers dark meat so we cut boneless, skinless thighs into bite size pieces & saute in olive oil. Also,like others, I melt the cheese in a saucepan with the milk & soup, pour it over everything and mix together. So good!

Should I mix it up and leave the cheese in chunks or should I cook it and then freeze?

    Spray a 2-Quart Baking Dish With Cooking Spray and Preheat Oven to 350f.

    Saute Onion Until Soft and Translucent.

    Cook Broccoli in Boiling Water For About Ten Minutes or Until Almost Tender; Drain Very Well.

    Mix All Ingredients and Place in Baking Dish.
