Uncle Bill’s Broccoli Soup,A delicious creamy soup and very easy to make. I developed this soup over 20 years ago and it has been a favorite.,If my kids ask for seconds, I give a recipe 5 stars. They asked for seconds! Great use of veggies! I especially liked that it didn’t have Velveeta cheese in it (unlike so many other broccoli soup recipes), just standard veggies and pantry items and easy to make. Oh, I didn’t use soup base, just homemade chicken stock. I added salt to taste after the soy sauce. used raw (whole) milk instead of half-and-half and I doubled the onions because I had a lot on hand.,WOW! That’s all I have to say!

In a Saucepan Over Medium-High Heat, Melt Butter. |

Add Onions, Carrots, Garlic and Cook For 5 Minutes or Until Softened, Stirring Occasionally. |

Reduce Heat and Simmer Covered, Until Broccoli Is Tender, About 15 to 20 Minutes. |

in a Blender or Food Processor, Puree' Soup in Batches and Return to Cooking Pot. |
