Creamy Curry Pork and Rice Bake, If you are a curry lover then please give this a try, I have made this many times in the past, it is delicious! I like to add in spinach but that is only optional I have only used basmati rice for this dish (I purchase a 12 ounce box of basmati rice) but you may use white uncooked rice also, personally I really think that this dish is worth making with basmati only To make this extra special sprinkle I have sprinkled it with toasted almonds before serving Use a good-quality coconut milk for this! This can also be made with cubed chicken breast, but pork is better, and the complete recipe can be doubled, you might want to cut the water back by 1/4 cup if you are doubling the recipe use only 3/4 cup water , This was a good dish I really appreciated the fact that it was very easy to prepare and is a pretty healthy meal I thought it was missing something, but I am not sure what I like the other posters idea of adding currents (i would use raisins) This totally a personal taste thing, but I think by browning the pork and then cooking it along with the rice, it ended up being over cooked I think I would have liked the meat better if I had had browned the meat and added it almost at the end of cooking the rice , This is Very Nice!! I really like the flavor of curried pork, since it’s more distinct than chicken, but I like chicken also Usually do pork curry on the cooktop and put it with or on basmati or jasmine rice, but casserole-style is a nice change, too I’m sure this would work well when adding other things for occasional variety, too I’ll make it as written a lot! May also make it skipping the water, but adding a can of diced tomatoes and sauteed diced green peppers I like adding currants to curries, sometimes, too The add-in I most want to try with this, though, would be sauteed apple slices (MacIntosh or Green Granny) It’s a delicious recipe, with the added bonus of being versatile, too Loved it!

in a Large Deep Oven-Proof Pot, Heat Oil Over Medium-High Heat. |

Brown the Pork in 2 Batches About 3 Minutes Per Batch; Set Aside to a Plate. |

Add in Curry Powder, Carrots and Onion (and Garlic If Using); Cook About 5 Minutes. |

Add in Coconut Milk, Chicken Broth, Water and Salt; Bring to a Boil. |

Stir in Rice, Chickpeas and Spinach, Cover With Lid. |

Place in Oven and Bake For About 25-30 Minutes, or Until Rice Is Tender. |
