Ingredients

Adjust Servings:
1 tablespoon olive oil, spray
2/3 cup parmesan cheese, freshly grated
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper, to taste
1/4 teaspoon salt, to taste
1/8 teaspoon pepper, to taste
1/2 large head cauliflower, cut into bite size pieces
2 eggs, beaten
1/2 cup parsley, finel chopped
1 lemon, cut in wedges

Crispy Cheese Cauliflower

    I made this tonight, with some changes (don't hate me for changing and reviewing!! This just might give someone else a new idea!). I substituted half of the parmesan cheese with panko, and, in addition to the spices in the recipe, I also added a little garlic powder and dried parsley). I also used only one egg, which seemed sufficient. My only cooking spray was Pam Baking (Made with Flour) No-Stick Cooking Spray. It may have helped to add to the crispiness, but definitely didn't detract from the recipe. used my convection oven setting--not sure if that changed anything either. All I can say is that it came out nice and crispy and flavorful. I think you can feel free to adjust the seasonings to suit your taste and change it up when making it. I'm thinking a little curry powder might be a good addition next time!
