1 cup sweetened flaked coconut
1 cup panko breadcrumbs
1 teaspoon onion powder
salt and pepper
1/2 teaspoon garlic powder
nonstick cooking spray
1/2 cup yogurt, vanilla or 1/2 cup sour cream
1/2 cup frozen pina colada mix

Make a big batch of pina coladas before hand and half the work is done!     Pre-Heat Oven 500 Degrees.

    Make a Batch of Pina Coladas, Pour Yourself Some and Turn on Jimmy Buffet.

    Combine the Yogurt/Sourcream and Pina Colada and Chill For Serving.

    Put Coconut Flakes and Panko in a Large Storage Bag.

    Dredge Shrimp in Cornstarch ( Shake Off Excess Before Next Step).

    Dip Shrimp in Egg Whites.

    Toss in the Coconut/Panko Bag ( Give a Little Shake With Each One So It Gets Coated Before You Throw the Next One In)

    I Usually Do 1/2 Batch First and Remove Them from Coconut/Panko Bag and Then Do the Rest).

    Spray Baking Sheet Liberally With Non- Stick Spray.

    Place Shrimp on Sheet and Spray Again,Liberally.

    Bake Each Side For 7-10 Minutes.
