Zucchini Fritters, , just tried this recipe and its really amazing, Added 1c grated carrot, chopped red onion, minced garlic, and a bit of fresh thyme in place of 1c of zucchini Mixed a box of bisquick and wheat bisquick just because I was running low, but actually like that It was less breakfast-y and more hearty tasting Squeezed all moisture from carrots and zucchini before assembling patties Served with a yogurt mint dipping sauce Baked on panini grill instead of frying Fresh grated Parmesan and gruyere instead of that shelf-stable canned white powder of despair
