Crispy Oven-Fried Cod Fish, There is nothing fancy about this but if your looking for a crispy coating without any deep-frying this is about as good as it gets, If your skillet is not large enough to hold all of the fish, then transfer to a baking sheet that has been coated with oil, only dry breadcrumbs or the coating will not adhere to the fish — cooking time is for oven only, if desired any large fish fillet can be replaced for the cod, all seasoning my be adjusted to taste, I’m sorry, but we found the fish cod dry, and the coating tough. I normally love kittencal’s recipes, so I was surprised., I made this tonight. My wife and I enjoyed it with a nice baked sweet potato, dirty rice, and a simple salad. I thought it was pretty good, so I decided to have a second helping. As it turns out, it was really great! Crispy and flavorful. The second helping was even better than the first. I can’t figure out how, as every piece was treated exactly the same, then set aside so they could be cooked exactly the same time. Go figure. I might try a bit less cayenne next time, not because it was a problem, but for a small twist, as there isn’t much else one can do to improve upon this recipe.
