Crispy Potato and Carrot Casserole, Taken from The Basic Shelf Cookbook , When I tagged this recipe I was gonna make it as written, but when I thought it over, I decided to cut the regular potatoes back to 4 & then include a medium-size sweet potato! I also used lemon pepper instead of the usual S&P, & it turned out very nice ~ At least 4 of us managed to devour most of it in one sitting!
