2 lbs sweet potatoes, peeled and coarsley grated
1 medium onions or 4 -5 green onions, finely chopped
2/3 cup all-purpose flour
1 - 2 tablespoon fresh minced garlic (optional or to taste)
2 large eggs, lightly beaten
2 teaspoons salt (or to taste) or 2 teaspoons seasoning salt (or to taste)
pepper
oil (for frying)

    These are awesome just the way they are. I am always afraid of latkes because I really don't like undercooked potatoes, but these were really great. All I had were spring onions, which are sort of between regular yellow and green onions and I think that the green part really add to the yum factor. I may try to spice them up sometime too, but I made them this way and really enjoyed them. I normally do NOT like using EVOO for cooking as I find most brands develop an off flavor, but I found one that doesn't do that and used it. I really added to the flavor!! LOVE IT, thank you so much!

    Sweet Potato Latkes (Pancakes), This is a family favorite! You can add in some cumin, cayenne and cinnamon too You might want to increase the recipe to 3 pounds of sweet potatoes along with the other ingredients, these are so good!     In a Large Bowl Stir Together Grated Sweet Potatoes, Onions, Flour, Eggs, Garlic, Salt and Pepper.

    Heat Enough Oil to Cover Bottom of a Large Skillet.

    in Batches, Spoon a Heaping Tablesooon Batter Onto Hot Oil and Flatten Slightly With Fork or Spoon.

    Cook For About 1-1/2 Minutes on Each Side (depending on How Crispy You Want Them).
