Crock-Pot Barley Casserole, Taken from busycooks about com This delicious and healthy crockpot recipe can be served as a vegetarian main dish or a side dish , I have been looking for something to use up my pearl barley and this was a good recipe to do it DH added a bit of precooked sausage to his but I ate it as written -except no mushrooms , Delish! I changed this recipe slightly to make it more like soup by using about 2 cups of mushrooms (didn’t measure), 1 can vegetable broth, 1 can tomatoes and about 1/2 can beef broth (which I needed to use up) and forgot about the pine nuts Great and hearty soup which we enjoyed Thanks for sharing!
