Ingredients

Adjust Servings:
2 lbs small red potatoes or 2 lbs small yellow potatoes
salt
3/4 lb thick sliced bacon, fried crisp and cut into 1/2 inch pieces
1 1/2 cups diced red onions
4 green onions, sliced
3/4 cup dill pickle, chopped
3/4 cup good quality green olives, chopped (with pimentos is okay, just good quality)
1 tablespoon garlic powder
1 cup mayonnaise
1 tablespoon dijon mustard
2 teaspoons habanero sauce

Cuban Potato Salad

    Hi, where exactly did you "find" this cuban recipe? I ask b/c I am cuban american and have been eating (our) potato salad my entire life. These ingredients are not it by a pretty good longshot. I'm wondering if there is a region of the island where this is popular, however if you google for the recipe (in spanish) you will find variations of MY recipe by far before you will even stumble on any recipe calling for red potatoes and black beans (if at all) - and...habanero chile? Try NEVER. The name is misleading b/c people associate habanero with La Habana, Cuba. Nothing doing...cubans eat little to zero spicy. Carbs & starches-that's our middle name, garlic-that's our first name, spicy/chili-Uh, NO. I only said "little to zero" in case I'm wrong and there is in fact somewhere in Cuba that people came to use spicy ingredients. But as far as my entire cuban life and society from different parts of the island...no spicy, folks. That's why I'm very curious as to where and how you came across this "cuban" potato salad recipe. I'm happy to be wrong, just dying to know. Anyone who wants to put it to the test: Google "ensalada de papa (fria) cubana." Word in parentheses optional... Oh, and cultural roots aside, the recipe sounds delicious and I'll be trying it fa sho!

Could not make enough! Customers special ordered it for catering functions. It requires patience while constructing but is well worth the effort. One thing I would advise: use quality ingredients which will elevate the taste. I shopped at Costco.

    Peel (or Not) the Potatoes and Boil With a Good Bit of Salt.

    Drain and Then Cube When Cool.

    Add Salad Ingredients to Potatoes.

    Mix Dressing Ingredients and Then Toss With Salad Ingredients& Potatoes.

    Best If Let to Set Overnight in the Refrigerator, but Let Sit on Counter 30 Minutes Before Serving For the Flavors to Be Most Apparent.
