Curried Couscous, This will seem like a lot of ingredients, but it’s not as much work as you’d think It is a great dish to prepare in hot weather – virtually no cooking involved! From The blessed Barefoot Contessa , Sooooo delish!! I can’t wait to make this for company! Used raisins (had no currants) and used only red onion (had no scallions) I will be making this often!, I fell in love with this the first time I tried it Great for days with amazing flavor I made some substitutions to make for less dairy (margarine for butter, soy yogurt) and didn’t add currants, red onion, or almonds until immediately before eating LOVE!

Pour Couscous in a Large Bowl, Melt Butter in the Boiling Water and Pour Over Couscous. |

Cover Tightly and Set Aside For 5 Minutes. |

in a Medium Bowl, Whisk Together the Yogurt, Olive Oil, Vinegar, Curry Powder, Turmeric, Salt and Pepper. |
