Danish Meatloaf, Best meatloaf EVER! We had this for dinner at a friend’s the other night, and couldn’t believe how good it was., This meatloaf was good–however, for some reason the blue cheese flavor in it seemed a little…off. The topping is spectacular. I think I’ll use it for ALL meatloaves from hereon in! If I make this one again, I would use only a tablespoon of water, or eliminate it altogether, as the topping seemed to fade away somewhat after baking. Also, I will double it, and put some on top of the meatloaf as it’s cooking, or maybe even bake some separately in a small baking dish to pass around the table. Yes, it’s that good!, Great meatloaf! I made half a recipe and loved the blue cheese. Served with baked potato.
