Darlenes Low- Cal, No-Fat Pineapple Cheese

Features:

I was very disappointed with this spread. I'd been planning to try this for several months and finally did shortly after the New Year, when I resolved to eat healthier. I'd read the reviews and thought it sounded good. This was one step above horrible and, after languishing in the refrigerator for two weeks, was thrown away. The cheese mixture before the seasonings were added was not offensive, just bland and ordinary. However, once you added the seasonings, it became harsh, bitter and chalky. Even many hours chilling in the refrigerator did not mellow the flavor. In a vain attempt to salvage the spread, I added more pineapple to counteract the seasonings, then attempted to thin and dilute it with more pureed cottage cheese, and then milk. Alas, at the end of the day, it just wasn't worth the calories (even if they are reduced in number!). On the upside, I do think the cheese mixture has potential as a base for a healthier spread. Some combination of fresh, chopped herbs and scallions would add fresh, vivid flavor, while avoiding that overly processed tang from the seasoning mixes. Also, thinning the spread slightly with lemon juice, milk or some other fluid would greatly enhance the texture. I don't mean to sound harsh; obviously, there are many people who loved it, just not me. :)
