    Nana Lee, so then I am to understand there is no water processing involved? And by reading these posts apparently 2 liquid pectins should be used? I too tried making last year but couldn't get to properly gel... Would you happen to know if cold or moisture will affect the gel solidification process? I no longer live in nc where I tried this the first time but have moved to the west coast beach area of Wa... so a little above sea level I believe.. Will this affect anything do you know? I appreciate any and all help you or ANYONE can give me? OR know of a link or recipe that will be able to have at least a year of dark storage like the other jams I've sucessfully canned this year? .     Sweet Pomegranate Jelly, I love pomegranates and it is hard to have to wait for the late fall season to be able to have them So making this jelly is second best You do not have to make the juice, it can be purchased in the Health Food section of your supermarket or a healthfood store Make sure it is pure pomegranate juice A good brand is POM They even have mix pomegranate and mango, plus other combos! If making this for gifts, you could probably make them in the 4 oz jars A truly beautiful and tasty jelly If you like currant jelly, you’ll love this!, Nana Lee, so then I am to understand there is no water processing involved?     Strain Juice Through Cheesecloth.

    Add Up to 1/2 Cup of Water If Needed.

    However, It Is Better to Use Pure Juice.

    Pour Juice Into a Large Pan, 6 to 8 Quart.

    Pan Should not Be More Than 1/3 Full.

    Bring Juice to a Full Rolling Boil Over High Heat, Stirring Constantly.

    Bring to a Full Rolling Boil (one That Will not Stir Down) and Boil Hard For 1 Minute, Stirring Constantly.
