Yummy Veggie Or Turkey Chili, You can also add eggplant or zucchini, if you desire. I have even used buffalo or venison in place of the turkey, and it makes it even better!, This turkey chili is so delicious and perfect for a “chilly day”. LOL I took a few liberties, but none that would alter the expected outcome – at least I hope not. I added a can of rotel tomatoes/chilies and I had some cooked black beans on hand so I added them along with the kidney beans. I didn’t use the red wine – just used chicken broth and more than called for. Added a touch of chili powder. Served with avocado, cheese, sour cream and tortilla strips. Will definitely make again and use the vegetarian version., Very good and healthy chili. used a full pound of ground turkey. I really love the carrots and corn along with the beans and turkey. To be honest, I didn’t like the taste the lemon zest and juice gave to the chili I do like lemon. I ended up adding chicken broth, a little more salt and pepper and some chili powder to the chili and then let it simmer another 15 minutes. That did the trick for me and I love it. When making this next time, I’ll just omit the lemon zest and juice and I think the chili will be perfect for my tastes. Thank you for sharing. I will enjoy this for my work lunches this week!

While Meat Is Cooking, Begin Sauteing the Vegetables. Start With the Onions, Then Add the Carrots, Bell Pepper, and Garlic. |

After 5-10 Minutes, Add the Cumin, Oregano, Fennel Seeds, and Cayenne Pepper to Taste. Then Add the Wine, Beans, Tomatoes, Corn, Meat, and Lemon Zest If Using. |
