Drop Dead Delicious Stuffed Zucchini, My mother-in-law is famous for her stuffed zucchini, and now I have the pleasure to share the recipe with all of you., This has a wonderful flavor! used ground turkey, minced garlic from a jar, didn’t have the peppers so just cut about 1/2 a yellow bell pepper instead and I also didn’t have thyme so used fresh basil instead. I probably needed more zucchini as I only had three small zucchini., I made it using Italian sausage, onion, garlic 1/3 cup parmesan, 3/4 cut mozzarella and 1/4 cup bread crumbs on top. Baked 3 50 for 30 minutes. Delicious and 1 cup marinara sauce.

Wash Zucchini, and Put in a Pot of Cold Water Do not Remove Ends. |

Bring to a Boil and Cook Until Tender, About 10-15 Minutes, Maybe a Little Longer Depending on the Size of Your Zucchini. |

Meanwhile, Heat Olive Oil in a Fairly Large Skillet. |

Saute Garlic First, Then Add Onions, Green Pepper, Thyme, and Oregano. |

When the Veggies Begin to Soften, Add Ground Meat or Whatever You Are Using, Season With Salt and Pepper, and Brown Until Cooked Through. |

Drain Off Any Excess Grease. |

When the Zucchini Have Cooked Through, Remove from Water, and Allow to Cool Enough to Handle. |
