Tomato Rice,From Ricardo’s magazine. Haven’t tried yet.,Really good recipe and a hit with the family. I modified it by using an onion/pepper mix that I cooked and drained, then continued with the directions. I also added a tsp of ground cumin too.,Exactly what I needed on this freezing cold day! Recipe excellent as-is. Needed only 20 mins, stirring once half-way through the simmer.

In a Large Saucepan Over Medium Heat, Soften the Onion and Garlic in the Oil. |
