Veggie Quesadillas, Looks like junk food but are a good way to sneak some veggies into your (or your kids) diet Also great for game day I make them for our poker parties or anytime we want a good for you snack , I thought with some vegetarians in our house, this would be a sure fire hit I was given two pieces of advise from my family concerning these One person said next time don’t shred the veggies Another said next time just make mine with cheese Guess they weren’t as big of a hit as I had hoped , This was an incredible dish My husband, who is not fond of melted cheese RAVED about it My son, who is not fond of most cooked vegetables gobbled it up I made it with two tortillas, with the filling in between So quick to make and so filling

Spray Pan With Cooking Spray and Heat. |

Add All Veggies Except Jalepenos and Green Onions and Cook Until Tender, About 3-5 Minutes. |

Heat Grill (or Another Frying Pan) and Spray With Cooking Spray. |

Place Tortilla in Pan and Fill One Side With About 1/2 Cup of Veggies. |

Grill For Aproximately 45 Seconds to 1 Mintute, Depending on Heat. |
