Easy Egg Salad

    Here is what you need to do: 1. Boil for 12 minutes NOT bring to a rapid boil and let it sit 15 minutes 2. Drain and run under cool water for 1 minute. That way the eggs inside will shrink and will be easy to peal. I've had hard time pealing them after following the recipe 3. Add 1 tsp of mustard and then slowly add mayo. That way you control the consistency and don't make it too liquidy.

I like it just as it is, but you can customize it by adding in chopped onion, tomatoes, relish or whatever you like.,Here is what you need to do: 1. My dh likes me to keep about a fourth of the egg yokes to chop up with the egg whites. I double the recipe mostly because l use 12 eggs. They really love this recipe. Even better the next day.
