Easy Fajitas

    This recipe is easy and delicious! And I also like that it is made from things I mostly have on hand. Other than the bell peppers and the skirt steak, I had nothing extra to purchase. I loved the addition of horseradish (I love it and it really caught my eye to make this recipe), I marinated the steak New Years Eve (during the day) and we had it that night with mexican rice, guacamole, refried beans and sopapillas for dessert. We used the leftover meat (I made only for DH and I) to make quesadillas New Years Day for dinner and it was still moist and flavorful. Thanks for posting!

    Easy Fajitas, This is an easy recipe for fajitas that are tasty and flavorful Prep time is marinating time The tequila, lemon juice, olive oil, and basalmic vinegar help break down the toughness of the meat If you can find it, Mexican oregano has a better flavor than regular oregano The brown sugar, adobo, oregano and liquid smoke give the meat a depth of flavor Its best to marinate overnight for the full flavor and cook the meat on the grill Use a good Tequila–it makes a difference , This recipe is easy and delicious!     In a Large Resealable Bag, Place Meat, Tequila, C Olive Oil, Horseradish, Liquid Smoke, Basalmic Vinegar, 2 Cloves Garlic, Adobo, Oregano, Brown Sugar, Liquid Smoke, Chopped Jalapeno, and Lemon Juice.

    Marinate Meat Overnight, Turning Once.

    Reserve Marinade.

    Grill Meat Over Medium Hot Coals About 4 Minutes Per Side. Take Meat Off Grill and Let Rest 10 Minutes Before Slicing Into Strips About 1 Inch Wide.

    Pour Marinade Into a Skillet on the Stovetop and Add Veggies and 1 T Olive Oil. Saute Until Crisp Tender, About 6-8 Minutes.

    For Sauce:

    Mix Sour Cream, 1 Clove Garlic, Cumin, and 2/3 C Picate Sauce in a Small Bowl.

    Heat 12 Flour Tortillas in the Microwave Until Just Warm.

    Serve Flour Tortillas With Veggies, Picante/Sour Cream Sauce, Avocados, Tomatoes, Lettuce, and Cheese. Guests Can build Their Own Mini-Fajita.
