Easy Hash Browns Pancakes

    Used this recipe as a base and added mashed potatoes (made slightly dryer than usual), an extra egg, grated cheddar cheese and seasonings (dry parsley, garlic, onions and thyme). Used an ice-cream scoop to obtain consistent portions and flattened lightly on top of very fine white cornmeal, turned it over to add the cornmeal coating to other side. Had guests over and made this as part of a brunch menu. It was a hit with everyone

    Easy Hash Browns Pancakes,This recipe is from an old issue of “Taste of Home” magazine. They are quick and easy and go great with ham slices.     Place the Hash Browns in a Strainer, Rinse With Cold Water Until Thawed. Drain Thoroughly; Transfer to a Large Bowl.

    Add the Flour, Eggs, Butter, Water, and Salt; Mix Well.

    Heat Oil in a Large Skillet Over Medium Heat. Drop Batter by 1/3 Cupfuls Into Oil; Fry Until Golden Brown on Both Sides.
