Easy Hash Browns Pancakes,This recipe is from an old issue of “Taste of Home” magazine. They are quick and easy and go great with ham slices. Good for breakfast or supper.,Used this recipe as a base and added mashed potatoes (made slightly dryer than usual), an extra egg, grated cheddar cheese and seasonings (dry parsley, garlic, onions and thyme). Used an ice-cream scoop to obtain consistent portions and flattened lightly on top of very fine white cornmeal, turned it over to add the cornmeal coating to other side. Had guests over and made this as part of a brunch menu. It was a hit with everyone
