Easy, Healthy Baked Chicken Breasts

    If anyone else followed this intending to use the chicken as anything other than a bouncy ball, here's a quick fix: Cut into medallions, hard sear in a buttered pan (yeah I know, we all came here for a healthier recipe but if you want to at least save this dish and make it palatable, just accept using a little butter) over med-high heat for about 1 minute per side, til golden brown. Squeeze a little lemon, add some fresh chopped scallions. Trust me, it'll solve the rubber issue.

    Rinse, and Pat Chicken Breasts Dry. Spray Small, Shallow Baking Dish With Cooking Spray. Sprinkle Chicken With Onion Powder, Garlic Salt, and Pepper. Place in Baking Dish. Add Chicken Broth to Dish.
