Easy, Inexpensive Lentil Tacos

    Delicious!! It's a staple in my family. I add tsp of coriander along with the other seasonings. I also add 1 cup of brown lentils and 1 cup of brown rice. I find that mixing the seasonings into the vegetable broth with a whisk prior to adding the lentils and brown rice helps to evenly distribute the seasoning.

    Easy, Inexpensive Lentil Tacos, Pleases even the pickiest eater! Full of flavor, you won’t miss the meat! VERY inexpensive and delicious. We’re not always the healthiest eaters, but we love this healthy meal!, Delicious!! It’s a staple in my family. I add tsp of coriander along with the other seasonings. I also add 1 cup of brown lentils and 1 cup of brown rice. I find that mixing the seasonings into the vegetable broth with a whisk prior to adding the lentils and brown rice helps to evenly distribute the seasoning., To me this wouldn’t be a good substitute for taco filling made with meat. I just really like ground meat in my tacos. But as a taco flavored lentil/rice dish this is quite good. I made it last night and ate a bowl of it with sour cream and salsa. The only change I made was to use white rice because I didn’t have any brown on hand. The only problem that I had with this recipe is that I had to add more water because not all the lentils were cooked. Most of them were but there were still a few that were crunchy. Even after adding more water and cooking longer there were still a few that weren’t quite done. I’ve had this problem every time I’ve cooked lentils so if any one has any lentil cooking tips I would appreciate it.

    Dump Everything in a Medium Pot and Bring to a Boil.

    Turn Down the Heat to a Little Lower Than Medium and Cook Covered Just Like Rice Until Done. I Usually Stir Every 5-6 Minutes, but You Probably Don't Need to Once the Spices Are Mixed!
