Weekend Breakfast Casserole, I have made adjustments to a recipe I found to suit my preferences I do not like adding a can of soup to my breakfast casserole so this version is less creamy (or gooey) I think what makes this so good is cooking the hash browns in a skillet first to brown and crisp before adding to the rest of the ingredients Squares of the casserole can be served with sliced avocado, pico de gallo, sour cream, sliced green onions or whatever suits you My husband likes dollops of salsa on it I actually like it plain , I have made adjustments to a recipe I found to suit my preferences I do not like adding a can of soup to my breakfast casserole so this version is less creamy (or gooey) I think what makes this so good is cooking the hash browns in a skillet first to brown and crisp before adding to the rest of the ingredients Squares of the casserole can be served with sliced avocado, pico de gallo, sour cream, sliced green onions or whatever suits you My husband likes dollops of salsa on it I actually like it plain
