Ingredients

Adjust Servings:
2 tablespoons vegetable oil
20 ounces refrigerated shredded hash browns (simply potatoes used)
3/4 teaspoon salt
1/2 teaspoon ground pepper
5 large eggs, beaten
1 cup milk
2 cups fully cooked turkey sausage, crumbles (or pork, jimmy dean brand is excellent)
1 cup shredded cheddar cheese (or your favorite blend, i like a colby and jack blend)

Easy Make-Ahead Brunch Casserole for Lazy Weekends

    I have made adjustments to a recipe I found to suit my preferences. I do not like adding a can of soup to my breakfast casserole so this version is less creamy (or gooey). I think what makes this so good is cooking the hash browns in a skillet first to brown and crisp before adding to the rest of the ingredients. Squares of the casserole can be served with sliced avocado, pico de gallo, sour cream, sliced green onions or whatever suits you. My husband likes dollops of salsa on it. I actually like it plain.

    Heat Oven to 350 Degrees and Spray a 7 X 11 Inch Casserole Dish With Pam.

    Cook Simply Potatoes in a Large Skillet With Vegetable Oil on Medium High Heat, Following the Directions on the Back of the Package. They Need to Be Golden Brown and Crispy but not Overcooked. Remember, They Will Cook More in the Oven.

    Sprinkle the Salt and Pepper Over the Potatoes as They Cook.

    Meanwhile, in a Large Mixing Bowl, Beat 4 Large Eggs With a Whisk.

    Stir in 1 Cup Milk, 1 Cup Shredded Cheese and 2 Cups Pre-Cooked Sausage Crumbles.

    Allow the Potatoes to Cool a Few Minutes Then Stir Into the Egg, Milk and Cheese Mixture. Stir Till Well Blended. Pour Into the Prepared Pan and Bake For 30 Minutes or Till Golden Brown and Cooked Through.
