Easy Overnight French Toast Casserole, Serve dusted with confectioner’s sugar and offer warm maple syrup, if desired Good sides are breakfast sausage links, fresh squeezed orange juice and fresh berries or melon chunks Yummy!, Different take: french toast subs for lasagna noodles or tortillas, Not exact same usage, but: light coat evoo in pan, coated bread layer next, baby spinach leaves, 1/4 feta + 3/4 ricotta mix Top with red pesto, light scatter of fine crumbled bacon First bread layer(bottom) is thick, like sourdough, successive layers thin(sponge read) is ok Successive filler layers may consist of any pizza type topping All bread egg mix coated My favorite fillers: chopped olives, bits of roasted tomatoes/peppers, crushed nuts, roasted, salted sunflower or pumpkin seeds These are the garnish with zucchini(not too thick) or partly brined, lightly pre cooked eggplant, either in smallish chunks Each layer swims in thickish sauce with pesto base & feta/ricotta mixture 4 layers bread minimum, refrigerate to firm up Bake, last 10 minutes coat with more egg mix, dust amply with parmesan for crusty top layer Forgiving recipe, think stacked tortilla or multilayer pizza Easy to sub veggies to taste or to use leftovers creatively Enjoy!
