    Easy Refrigerator Pickled Beets,Be sure to roast extra beets for dinner the night before to make this recipe quick and easy.,These turned out great! Not too “vinegary”, perfect spices and sweetness. Thank you for sharing. A new/old staple in my refrigerator without canning a huge batch.,I didn’t tweak anything. I always make things according to the recipe first time…and quite frankly…I wouldn’t change a thing!

    Bring to a Boil: Water, Vinegar, Spices & Sugar.

    Peel Roasted Beets. Cut Into Quarters or Slices. Pack Into Clean Quart Jar.

    Pour Hot Brine Over Beets in Jar. Cover Beets Completely (add Filtered Water If Needed).

    Store in Fridge For 3-4 Days, Then Enjoy.
